No Added Sugar Recipes from Today Show

I've have loads of requests for my 'no added sugar' recipes from the Today show! Here they are below - try them out and enjoy.

  • Just remember that many fruits, root vegetables and many nuts and grains are naturally sweet and can be easily used as a sugar substitute.
  • You can also use flavours such as cinnamon, nutmeg, cardamon and vanilla extract to flavour and sweeten your favourite dishes.
'No added sugar' Frozen Banana Ice cream
3 bananas
1/4 tsp vanilla extract
Peel three bananas and chop them into inch long pieces
Place in a sealed bag and put in the freezer for at least 4 hours.
Remove from freezer and put in a food processor with the vanilla.
Blitz well. Initially the banana will look like broken pieces but keep blending and it will start turning into a silky smooth texture.
Place in a container and store in the freezer.
This goes perfectly with some fresh strawberries or raspberries.
'No added sugar' Apple muffins
200g white or wholemeal flour
2 tsp baklng soda
2 eggs
1 banana - black and ripe - mashed
2 apples - something like a Royal Gala
1/2 tsp cinnamon
Preheat oven to 200 oc
Quarter apples and remove the core. Roughly chop and place in a saucepan with a dash of water and the cinnamon.
Cover and cook on a medium heat for about 5 minutes or until the flesh begins to break down.
Remove from heat and place in a food processor and blend until smooth.
Sieve the flour and the baking powder into a large bowl.
Whisk the egg in a separate bowl and stir through the mashed banana and pureed apple.
Gently stir the egg mixture into the flour and mix well.
Spoon the mixture into a muffin case (this recipe makes around 6 large muffins)
Place the muffins into the oven and drop the temperature down to 170 oc as soon as they are in.
Cook for about 25 minutes. They are done when you stick a skewer into the middle of the mixture and it comes out fairly dry.
Remove from oven and leave to cool on the muffin tray.

'No added sugar' Sweet Potato Chips
2 sweet potatoes
A little salt and paprika
Preheat oven to 120 oc.
Clean the sweet potatoes well with a little water.
Using a grater, start the grate away slivers of sweet potatoes and allow them to fall over a baking tray.
Sprinkle a little salt and paprika on the chips and mix well with your hands.
Place the baking tray in the oven and cook for about 20 minutes. Shake the tray every 5 minutes or so to dislodge the sweet potatoes.
The sweet potatoes are done when they are nice and crispy.
